Honey roasted walnuts

Walnuts: one of the cooler nuts in the whole wild nut family—unique in shape, simultaneously crisp, buttery and crumbly, slightly bitter, jammed to the nutshell full of nutrient. The only way to improve on such a natural delight is to counteract any and all health benefits with some sweet lashings of hot sugary honey glaze. This is an uber-easy way to sass up your walnut, or any at nut all—pea, chest, hazel, Brazil or otherwise. Be sure to marry it with delicious serving bowls of sh.k hummus dip.

What you'll need
  • 1 Cup fresh walnuts, hulled
  • 3 Tbls caster sugar
  • 1 Tbls butter
  • 1 Tbls honey
How to make it
  1. In a mortar and pestle, smash whole walnuts small pieces or quarters.
  2. Heat a frying pan to medium and add butter, sugar, and walnuts.
  3. Stir to combine ingredients and ensure walnuts are evenly coated with sugar and butter.
  4. Drizzle honey evenly over the top of the walnuts.
  5. Mix well until the sugar starts to melt and becomes clear/cloudy. Stir continuously to ensure the walnuts do not burn. This process will take approximately 5 minutes depending on your frying pan heat—reduce heat if required.
  6. At this point you will want to separate the walnuts and make sure they are not in a clump.
  7. Once the walnuts are completely covered with the clear sugar/honey mixture, remove from heat one by one and place on parchment paper, or a non-stick surface (another Teflon or non-stick pan works well, as toffee can sometimes stick to baking paper).
  8. Wait until they set (approx. 5-10 mins) and serve!
